La cochinita pibil es un platillo tradicional mexicano que se originó en la época prehispánica de la civilización maya. Se preparaba con carne de venado, faisán, pavo de monte y pecarí. Se cocía en un horno de tierra llamado pib. La palabra “pibil” proviene de la lengua maya y significa “enterrado”. Durante la Colonia, se empezó a utilizar carne de cerdo en lugar de carne de caza.
