Brisket Wrap with Butcher Paper. Here’s my latest method for wrapping briskets with butcher paper. I’ve simplified it quite a bit over the years so I figured you’re due for an update. I use 18” butcher paper. I overlap two pieces so it’s wide enough to fit the whole brisket. I spritz with water so it’s more pliable. Here’s a quick video of how I wrap my briskets. Three tips to keep in mind: 1) Spray the pink butcher paper to make it more pliable. 2) Rub brisket with beef tallow for extra flavor on the bark. 3.
